Fresh Tomato sauce

Ingredients

  • 2 kilos of tomatoes roughly chopped
  • A good drizzle of regular olive oil 2-3 tablespoons
  • 3-4 sprigs of oregano
  • Approx 10-20 medium basil leaves
  • 2-3 garlic cloves sliced in half
  • ¾ tablespoon salt
  • Pinch of black pepper

Instructions

  1. In a medium to large pot, add the olive oil, garlic and tomatoes
  2. Turn the heat to high for about 5 minutes until it starts to bubble, then turn the heat to low.
  3. De-sprig the oregano and add with the basil, cover with a lid.
  4. Cook for for around half an hour, stirring occasionally.
  5. Add the salt and pepper 15 minutes before you turn the heat off, taste and adjust accordingly.
  6. Remove the garlic pieces
  7. Blitz with a hand blender until smooth

Let it cool before you store in the fridge or freezer.
