    Herb Roasted Salmon

    Herby garlicky salmon on a bed of potatoes and green beans is that recipe you need to get in your repertoire.

    The fact that it's healthy, quick and easy is just a bonus.

    The herb sauce, made with parsley, thyme, cilantro (fresh coriander) and dried oregano goes on the salmon right at the end as you don't want to overcook them.

    The great thing about salmon is that is has so much flavour it doesn't need much fuss to make it amazing.

    Ingredients

    I've used a joint of salmon here, though you can also use fillets.

    Very fresh fish shouldn't have a 'fishy' smell, and the surface shouldn't be slimy either.

    I've lightly seasoned the potatoes and salmon with a teeny tiny pinch of turmeric, black pepper and dried oregano.

    The spices should serve as an undertone to the fish so you don't need to add too much, especially salmon as it is already bold in flavour.

    Make the chimichurri style herb sauce using fresh herbs at hand and a sprinkle of red chilli flakes.

    I've used extra fine green beans which are in season. I find they taste better than standard green beans and cook faster.

    Instructions

    This is a one pan dish that means you don't have to cook the fish and veg separately.

    The potatoes need a little extra cooking time so they go in first. The salmon and extra fine green beans need about the same time.

    The main steps in this recipe are as follows:

    Cook the potatoes for 20 minutes then add the green beans and salmon for another 15 minutes

    Once the salmon is nearly baked, remove from oven

    drizzle on the sauce

    Drizzle on herb sauce and bake for 5 minutes

    Variations

    Most recipes are flexible and here are a few variations for you to try.

    • Rice - skip the potatoes if you want to eat on a bed of rice
    • Broccoli - you can use tender brocolli stems instead of green beans
    • Spicy - add ¼ teaspoon of cayenne powder to the salmon for a little kick
    • Smoky - cook on the grill and drizzle the herb sauce on at the end.

    Top Tips

    The best way to make a herb sauce is to taste it and adjust as necessary. I know this sounds hard but if it's too sharp add salt. If it's too dull, add lemon.

    A small handful of herbs is taken with the tips of your hand. A few sprigs will do.

    A tiny pinch is the tip of a small spoon. It should be minimal. Much less than ¼ of a teaspoon.

    I've used potatoes suitable for roasting. In the UK it's Maris Piper. In the US , I think it's the Russet potato.

    If you love the taste of fresh garlic you don't even need to bake it again once you add the herb sauce. Simply cook the salmon for around 20 minutes and drizzle on the sauce at the table.

    Herb Roasted Salmon

    Oven baked herby salmon on a bed of potatoes and green beans

    Ingredients

    • 500 g salmon joint
    • 3-4 potatoes suitable for roasting
    • small handful extra fine green beans approx 200g
    • drizzle mild olive oil
    • tiny pinch turmeric sprinkle
    • tiny pinch black pepper
    • small pinch dried oregano

    For the herb sauce

    • ½ cup extra virgin olive oil
    • 1 garlic clove finely chopped
    • good squeeze lemon approx 2 tbsp
    • sprinkle of salt
    • small handful fresh thyme finely chopped
    • small handful parsley finely chopped
    • small handful fresh coriander cilantro, finely chopped
    • small pinch dried oregano
    • small pinch red chilli flakes

    Instructions

    1. In a bowl add a good drizzle of mild olive oil, a tiny pinch (sprinkle) of turmeric and black pepper
    2. Peel and chop the potatoes into inch wide cubes, and add to the bowl. Mix well then transfer the potatoes to a wide roasting pan. Cook for 20 minutes, turning the potatoes half way

    3. In the bowl with the turmeric and black pepper, add the salmon and green beans and mix gently.

    4. Once the potatoes have been in for 20 minutes, lay the salmon and green beans on top of them and cook for another 15 minutes

    5. Meanwhile, finely chop the herbs and add to a bowl with the extra virgin olive oil, garlic, sprinkle of salt, lemon, dried oregano and red chilli flakes. Taste and adjust the sauce as necessary

    6. When the salmon is nearly done, take out and drizzle on most of the herb sauce. Put back in the oven for a further five minutes.

    7. Serve warm with the extra herb sauce at the table
