My Lebanese watermelon salad is so refreshing, delicious and easy to make it hardly needs a recipe, but i've written it out just for you.
I love salads with white cheese and can't resist ordering them when in a deli, just to pick out the cheese.
The secret ingredient is pomegranate molasses (rub ruman) which replaces lemon and adds a unique tangy sourness.

I also have another halloumi melon salad which is similar and worth checking out.
Of course don't forget our classic fattoush salad, tabbouleh and cabbage and tomato salads.
Ingredients
Choosing a firm ripe watermelon is key, and you should look for several things:
The stem should be dry and woody, and when you 'slap' the watermelon it should reverberate slightly to indicate high water content.
A yellow 'field spot' and brown webbing also indicate high sugar content for sweetness.

You can use any white firm cheese that will hold its shape.
Feta is always a good available option, but also a firm cream cheese or goats cheese can be delicious.
I love to garnish with chives instead of thick onion pieces, although you can slice very thin strands of onions if you prefer.
I also like to add flaked almonds as they add crunch without being too chunky.
Of course a good drizzle of pomegranate molasses will bring the whole thing together, you can replace this with cream of balsamic vinegar if you don't have any.
Finally a good drizzle of extra virgin olive oil is essential.
You can chop the salad any way you want but I think a nice variation of squares, semi circles and triangles makes it pleasing to the eye.

Lebanese watermelon salad
Refreshing tangy perfectly balanced watermelon salad for summer
Ingredients
- 4 cups watermelon cut into bitesize triangles
- 1 cucumber sliced half circles
- ½ cup feta cheese *or other firm white cheese
- 7-10 chives finely chopped
- 5-7 mint leaves finely chopped
- 2 tablespoon pomegranate molasses
- 2 tablespoon extra virgin olive oil
- sprinkle of salt
- flaked almonds for garnish
Instructions

Slice the watermelon into bitesize triangles and place onto a large platter

Finely chop the mint and chives, sprinkle on top

Add the cucumber (sliced in half then semi circles) and the feta

Sprinkle the salt, drizzle the extra virgin olive oil and pomegranate molasses

Garnish with a small handful of flaked almonds

Taste and adjust seasoning as necessary.
