    Hummus Beiruti

    Hummus Beiruti is hummus upgraded to be spicier, herbier and garlickier, and it's very good.

    I'm not sure why it's called hummus Beiruti, maybe because people from Beirut are sassier?! 😂

    My very popular Lebanese hummus recipe is a good start for this, but if you are in a rush you can also use good quality supermarket hummus or even better from a Lebanese deli.

    I'm going to give you the recipe for one bowl but of course scale up if you have guests coming and want to make several bowls on the table.

    Ingredients

    Just because we are upgrading the hummus doesn't mean we have to add a million unnecessary things.

    We need one tomato, a small handful of parsley, a few pickles, a little chilli and a garlic clove.

    I didn't even use all of this for one bowl, you just need half a small tomato, half the chilli, 2-3 of the small cornichon pickles and part of the garlic clove.

    I also added paprika and a touch of cayenne pepper to get a different layer of spice, one that hums and one that burns the back of your throat.

    Instructions

    So basically once you have your hummus ready, just chop everything really finely and mix.

    Add extra virgin olive oil at the end and garnish like your teta would.

    Top Tips

    Hummus beiruti is best served with the thin Lebanese flatbreads.

    You can accompany this with grilled fish, chicken or meat, which all work well with lemony tahini flavours.

    I find it's best to chop with a sharp knife rather than a food processor here as it will mush the tomato and butcher the herbs inconsistently.

    The important element of the hummus beiruti is the texture, which is why sharp knife is best.

    If you are using supermarket hummus, you may want to add extra lemon and tahini to brighten it up.

    As it has fresh garlic, it will store in the fridge for up to three days.

    Hummus Beiruti

    Herby spicy garlicky hummus

    Ingredients

    • 1 bowl of hummus approx 250g
    • a few sprigs of parsley
    • half a small tomato finely chopped
    • 2-3 mini cornichons or 1 pickle finely chopped
    • half a chilli finely chopped
    • a pinch of paprika
    • a tiny pinch of cayenne
    • extra virgin olive oil
    • extra lemon and tahini optional

    Instructions

    1. Prepare the hummus in a mixing bowl
    2. Finely chop the parsley, tomato, pickles, chilli and add to the hummus, along with the paprika and cayenne. Mix well
    3. Taste and adjust the spice level and seasoning to your preference, feel free to add extra lemon and tahini if required

    4. Transfer to a wide bowl and use a spoon to create a dent in the middle to drizzle extra virgin olive oil. Garnish with optional chopped herbs and serve with flatbreads
