    Sweet and Salty Roasted Nuts

    I used to always get roasted nuts from special roasteries in Lebanon, but some years I couldn't get hold of them so I started making my own.

    You know when you crave something but never really think of making it... until one day you do and realize how silly you were for avoiding it. This is that recipe.

    And also, you can never get enough of the ones you love like the roasted almonds in the mix so this way you can just put in your favourites and leave out those horrid floury chickpeas!

    My version of sweet and salty roasted mixed nuts include cashews pecans and almonds, with maple syrup and fine sea salt.

    Mix all the ingredients in a bowl, put it in the oven and let it cool. That's it.

    I also have another version for spicy nuts which is basically the same but use smoked paprika and chilli powder.

    Ingredients

    I've used the following nuts:

    • cashews
    • almonds
    • pecans
    mixed roasted nuts

    You can also add:

    • peanuts
    • walnuts
    • pistachios
    • hazelnuts
    • macadamia

    What other nuts are there? I can't think of anymore.....Chickpeas are banned.

    Instructions

    In a good sized bowl, add the nuts with a drizzle of olive oil and maple syrup and a pinch of fine sea salt.

    Simply line a baking tray with parchment paper and transfer, ensuring they all have space to roast.

    When I finish I also add a sprinkle of light brown sugar for some texture.

    This will make a light coating as I don't like things sticking to my teeth. If you want things sweeter add another tablespoon of maple syrup and brown sugar.

    Variations

    You can also make the same recipe and substitute the maple syrup for honey. Also try:

    • Spicy - add a dash of chilli powder to make it spicy and sweet
    • Chocolatey - add a bar of salted caramel chocolate broken up into shards
    • Fruity - add dried cranberries or sultanas

    If you are going to try a different version, adding salted caramel chocolate makes them even more irresistible.

    You'll find these nuts are gone in a blink of an eye so don't be surprised if your family are begging you to make more. Embrace the calling and fulfil your epic snack destiny. There is no other way.

    Sweet and Salty Roasted Nuts

    Lightly coated mixed roasted nuts

    Ingredients

    • 2 cups almonds
    • 1 ½ cup cashews
    • ½ cup pecans
    • 3 tablespoon maple syrup
    • 2 tablespoon mild olive oil
    • fine sea salt
    • 1-2 tablespoon light brown sugar

    Instructions

    1. Preheat the oven to 175C (340F)

    2. In a good sized bowl, add all the nuts, mild olive oil, maple syrup and a good pinch of fine sea salt

    3. Mix well and transfer to a baking tray lined with parchment paper

    4. Roast in the oven for 10 mins, turning occasionally

    5. Leave to cool for 5-10 minutes then sprinkle on the light brown sugar and another good pinch of fine sea salt

    6. Mix again, taste and adjust as necessary before leaving to cool completely

    7. Transfer to an airtight container and store in a cool dark place.

    Recipe Notes

    You can also use pistachios, walnuts, macadamia, hazelnuts and peanuts.
